Cocoa (Theobroma cacao) extract, kernel, partially fat reduced’ (will be referred to as “cocoa powder”) is composed mainly of vegetable oil (Glycerides, C16-18 and C18-unsatd.), protein, starch and fibre, with smaller amounts of organic acids (principally, citric, acetic, lactic and oxalic), catechins, tannins, theobromine and caffeine. As such, the metabolic fates of the chemically distinct component groups have been evaluated individually in the end points.

Cocoa powder is a UVCB consisting of a large number of groups of compounds, the human health effects of the substance are the sum of the effects of the constituent groups. Details on the toxicokinetics of these constituent groups are provided in detail in the summary reports for the different components.
