Results indicated that AITC was the most inhibitory of the sinigrin hydrolysis products. AITC had an MIC of 50 to 1000 ppm for bacteria and 1 to 4 ppm for nonxerotolerant yeasts, and, against xerotolerant yeasts at 50 ppm, it retarded but did not prevent growth.
