Iron is solubilised in the acid pH of the stomach then chelates with proteins which retain the iron in soluble form available for absorption in the higher pHs of the small intestine.

Proteins on the surface of the absorptive cell facilitate the transfer the iron through the cell membrane into the absorptive cell where it binds with a shuttle protein.

Justification for read-across

The surrogate material dissociates in physiological pH to the same species produced by the (iron III & II) salts after equilibration. As discussed in the category justification section, such equilibrium is quickly established. In result, iron species burden is assumed to be comparable to equimolar exposure within the iron category member salts.
