According to Level III Mackay fugacity model, soil and water are the main environmental compartments where sorbic acid is distributed. A relatively high mobility in the soil fraction can be expected, based on a Koc value of 0.015. However, it can be assumed that it is quite rapidly degraded during the soil passage as sorbic acid is readily biodegradable. The photodegradation of sorbic acid in soil in only of minor importance and varies between 17.3 days and 6.7 years depending on seasonally varying solar irradiance intensity. In the water phase, it has only a low potency to volatalise from the water surface. The distribution in the sediment fraction is negligible which is contributed its low potential for adsorption, and only a small amount reaches the air. The atmospheric half-life of sorbic acid is about 7.65 hours under annual averaged conditions of the northern hemisphere. Due to its low Koc value, a sorption to airborne particles is unlikely, which indicates a low potential for long-range transport.

In the biotic compartments of the environment, a bioaccumulation of sorbic acid cannot be assumed as both the bioconcentration factors for aquatic and terrestrial species are low.
