Potassium sorbate just as sorbic acid does not require classification for acute toxicity, except for mild eye irritation.

Potassium sorbate and sorbic acid lack of genotoxicity, reproduction toxicity and carcinogenicity.

A NOAEL of 6800 mg/kg bw/day has been estableshed for sorbic acid in the 90 -day feeding study in rats, in which a complete absence of any systemic toxicity was observed.

Potassium sorbate and sorbic acid have been in use as food additives (preservatives) for a number of decades without any reporting of such incidents.

The extrapolation from sorbic acid to potassium sorbate is considered not to be restricted in any way, since the determinant of potential toxicity is the "sorbate" anion.
