Description of key information

The partition coefficient of potassium sorbate was determined by extrapolation from the partition coefficient of sorbic acid according to the provisions of the OECD Guideline 117 (HPLC Method) and EU Method A.8.

The determination of the octanol/water partition coefficient of sorbic acid was performed according to EU method A.8 and OECD guideline 117, HPLC method. The log Pow of sorbic acid was found to be 1.32 (at pH = 2.5) and -1.72 (at pH = 6.5), respectively.

The assigned pKa value of 4.76 indicated to perform the determination of the partition coefficient in the acidic (pH 2.5) and neutral range (pH 6.5).

Extrapolation of the partition coefficient from sorbic acid to potassium sorbate is considered not to be restricted in any way, since the relevant moiety is the sorbate anion, and re-dissociation to sorbic acid can be expected under environmentally relevant conditions.
