Xylitol is a polyol (or sugar alcohol) and carbohydrate of at least 3 hydroxyl groups. It is industrially produced either by catalytic hydrogenation or fermentation process. Xylitol has well-defined physicochemical properties and is readily biodegradable in the environment.

Xylitol will not partition to air. If xylitol partitions to soil, it is expected to have high mobility based on an estimated log Kow of -2.56. However, xylitol is expected to rapidly biodegrade in soil based on the ready biodegradability studies. Volatilisation from moist soil surfaces is not expected to be an important fate process. If xylitol partitions to water, the test substance is not expected to adsorb to suspended solids and sediment in the water column based upon the estimated log Kow of -2.56. For soil, the log Kow of -2.56 indicates a potential for high mobility to groundwater. Volatilisation from water surfaces is not expected to be an important fate process.
